STAN’S STUFF SHRIMP ROLLS & ZUCCHINI FRIES

Makes 4 servings
Roast at 450 degrees for 30 minutes
Ingredients
½ lb cooked medium shrimp
1/3 cup reduced fat mayonnaise
1 stalk of celery
2 tsp lemon juice
1 tsp Dijon mustard
1 tsp Stan’s Stuff
1 tsp fresh tarragon
4 split top buns
2 large zucchini
2 egg whites
1 cup of panko crumbs
Directions
Cut the cooked shrimp into large chunks.
Combine the shrimp, chopped celery, mayonnaise, lemon juice, Dijon mustard, Stan’s Stuff, and tarragon into a large bowl.
Refrigerate until ready to serve in the warm split top buns.
Preheat oven to 450 degrees for the zucchini fries.
Wash and cut the zucchini into long wedges.
Coat the wedges in the egg whites and panko crumbs and spread out on baking sheet.
Sprinkle Stan’s Stuff on top for desired taste and place in oven for 30 minutes.
