Southwest Sweet Potato Salad



3          medium sweet potatoes

1          can of black beans

1          can of whole corn

1          onion

4          mini sweet peppers

2          tablespoons of olive oil

Use Stan’s Stuff as desired



  • 12”x18” Baking sheet
  • Cutting board
  • Sharp knife
  • Vegetable peeler
  • Aluminum foil
  • Can opener
  • Slotted serving spoon
  • Large serving bowl



  1. Preheat oven to 375° and cover the baking sheet in aluminum foil.
  2. Wash and peel sweet potatoes
  3. Cut the sweet potatoes into chunks and toss them in the olive oil on the baking sheet. Then sprinkle the desired amount of Stan’s Stuff™ seasoning on them.
  4. Bake sweet potatoes for 40 minutes
  5. In a large serving bowl, combine the chopped onion and mini sweet peppers, black beans, and corn.
  6. Remove sweet potatoes from oven and let them cool before mixing them into the bowl.
  7. Enjoy!
